Three kinds of produce behave like three different ingredients here. Carrot brings color and body, zucchini carries quiet moisture, and diced apple makes bright little pockets inside a butter-rich, orange-scented crumb. Pecans draw a savory line through the sweetness; cinnamon, clove and nutmeg keep the loaf warm rather than heavy.

Trish Rosenquist’s two-loaf formula first appeared on Mom On Timeout in 2013 and was published in its current form in 2017. The queued 2018 My Recipe Magic card points back to that primary page. This edition keeps the formula intact, including the optional cream-cheese finish, while making the moisture, doneness and cooling decisions easier to read.

Squeeze one vegetable

Drain the zucchini firmly; leave the carrot and apple alone so each contributes its intended moisture.

    Bring the oven to 350°F and prepare two 8-by-4-inch loaf pans.

    Twist the shreds in a clean towel until they stop giving up easy liquid.

    Combine dry ingredients in one bowl and butter, sugar, eggs, orange and vanilla in another.

High-moisture zucchini bread belongs in the refrigerator; a cream-cheese-frosted loaf should be chilled within two hours.

Use within four days

Cut only the slices needed and return the loaf to cold storage so the crumb stays protected.

Freeze without frosting

Wrap a whole loaf or individual slices airtight, thaw in the refrigerator, and add frosting after thawing.

Ingredients

Carrot, apple and zucchini loaves

  • 1 cup (226 g) unsalted butter, melted
  • 2 cups (400 g) granulated sugar
  • 3 large eggs, at room temperature
  • 1/4 cup (60 ml) fresh orange juice
  • 1 tablespoon vanilla extract
  • 3 1/4 cups (390 g) all-purpose flour
  • 1/2 teaspoon fine salt
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • Pinch of ground cloves
  • Pinch of ground nutmeg
  • 2 cups shredded carrots
  • 1 cup shredded zucchini
  • 1 cup peeled, diced apple, such as Granny Smith or Fuji
  • 1/2 cup chopped pecans

Optional cream-cheese frosting

  • 1/2 cup (113 g) cream cheese, softened
  • 1/4 cup (57 g) unsalted butter, softened
  • 2 to 3 cups (227 to 340 g) powdered sugar
  • 1 to 3 tablespoons fresh orange juice, as needed

Directions

  1. Heat the oven to 350°F (175°C). Grease and flour two 8-by-4-inch loaf pans, line their long sides and bottoms with parchment, and set them aside.
  2. Put the shredded zucchini in a clean kitchen towel, gather the corners and twist firmly to squeeze out as much liquid as possible. Separate the shreds and set them aside.
  3. In a large bowl, whisk the flour, salt, baking powder, baking soda, cinnamon, cloves and nutmeg until the leaveners and spices are evenly dispersed.
  4. In a second large bowl, whisk the melted butter and granulated sugar. Add the eggs, 1/4 cup orange juice and vanilla and whisk until smooth and combined.
  5. Add the dry mixture, carrots, squeezed zucchini, diced apple and pecans to the wet mixture. Fold only until no dry flour remains and the produce is evenly distributed.
  6. Divide the batter evenly between the prepared pans and level the tops. Bake for 55 to 60 minutes, until the crowns are golden brown and spring back lightly. A thin knife or tester inserted in two center spots should show no wet batter; an instant-read thermometer can confirm 200 to 205°F (93 to 96°C).
  7. Cool the loaves in their pans for 10 to 15 minutes, then lift or turn them onto a wire rack. Let them cool completely before slicing or frosting.
  8. For the optional frosting, beat the softened cream cheese and butter until smooth. Beat in 2 cups powdered sugar, then add more sugar or orange juice a little at a time until spreadable. Frost only the completely cooled loaves.
