This is a casserole with a roof, not a stir-together bake. Blair Lonergan’s farmhouse formula keeps creamy chicken below and sweet, tender cornbread above. The border between them is the pleasure: cheddar and two condensed soups make the lower layer lush, while cream-style corn and sour cream keep the upper crumb from eating dry.

Its pantry ease makes precision more important, not less. Smooth the soups before the chicken arrives, stop mixing the topping as soon as the dry streaks vanish, and spread rather than swirl. Then judge the deepest part of the dish: the top can look finished before the egg-rich center is set.

“Blair Lonergan’s farmhouse casserole pairs cooked chicken, cheddar, milk, and two condensed soups with a Jiffy-style cream-corn topping.”

Silky first

Whisk both condensed soups with milk before the chicken enters; the filling should be smooth before it becomes crowded.

Two clear layers

Spread filling corner to corner, then float the thick corn batter over it without stirring the two together.

Read the center

Gold is only the surface signal. A clean toothpick and a 165°F center confirm that batter and casserole are both ready.

Ingredient editSmooth savory moist sharp

Four pantry moves, each with a job

The ingredient list is short because every packaged component carries more than one kind of structure or seasoning.

01

Two condensed soups

Chicken soup supplies savory body while mushroom soup adds an earthier base; milk loosens both into one pourable sauce.

Use them undiluted, then add only the measured 3/4 cup milk. Whisk smooth before folding in the chicken.
02

Cooked chicken

Four cups make this a true dinner casserole rather than cornbread with a little filling hidden underneath.

Dice or shred rotisserie or leftover roast chicken. Raw chicken cannot safely share this topping’s bake time.
03

Cream-style corn

The can brings liquid, starch, sweetness, and kernels to the boxed mix, producing a moist spoonbread-like crumb.

Add the entire can. Draining it would remove the moisture the topping was formulated around.
04

Sharp cheddar

One cup melts through the pale filling and gives the otherwise gentle pantry base a focused savory edge.

Grate it so it distributes evenly; taste the cooked chicken before considering any optional salt.

Before mixingDish chicken butter foil

Set the layers before opening the cans

A measured baking dish, truly cooked chicken, tempered butter, and foil within reach make the compact assembly calm.

Keep the border

Level the filling, spread the batter, and stop. The clean seam between creamy chicken and cornmeal crumb is the dish’s architecture.

Fifteen minutes to build, forty-five to bronze

The assembly is brief; most of the work is waiting for the deepest cornbread to set without over-coloring the surface.

  1. 0:00

    Heat + coat

Bring the oven to 400°F and mist a 3-quart baking dish so the edges release cleanly.

  2. 0:03

    Smooth the filling

Whisk both condensed soups with milk, then fold in cooked chicken and cheddar.

  3. 0:08

    Mix the corn lid

Combine muffin mix, cream-style corn, sour cream, egg, and melted butter just to a thick batter.

  4. 0:12

    Build two layers

Level the chicken filling, then ease the batter over it from edge to edge without swirling.

  5. 0:15

    Bake uncovered

Let the top rise and bronze for 40–45 minutes; tent only if its color gets ahead of the center.

  6. 1:00

    Rest before the spoon

Give the casserole 5–10 minutes so the creamy layer thickens and the cornbread crumb settles.

Doneness cuesSmooth thick clean creamy

Read the casserole below the color

Four textures mark the route from condensed base to a spoonable, safely heated finished casserole.

01

Smooth, ribboning sauce

Before chicken enters, the soup-and-milk base falls from the whisk without dense white or beige pockets.

02

Thick, slightly lumpy batter

The topping spreads under gentle pressure but does not pour like pancake batter. Small lumps are welcome; dry pockets are not.

03

Golden top, clean center

The rim is deep gold and the center no longer shines wet. A toothpick returns without raw batter clinging to it.

04

Creamy, not running

After its short rest, the filling remains soft and saucy but holds beside the spoon rather than flooding the plate.

Make ahead + keepChill top rest reheat

Hold the filling; mix the topping fresh

Separating the make-ahead layers protects the lift of the cornbread and keeps leftovers from drying under repeated heat.

Make the filling one day ahead

Spread the chicken mixture in the dish, cover, and chill. Mix and add the cornbread topping only when the oven is heating.

Serve after a short rest

Five to ten minutes is structural, not decorative: the hot filling thickens and the topping cuts more cleanly.

Keep three to four days

Cool promptly, cover, and refrigerate at 40°F or below. Reheat only the portions needed to 165°F.

Freeze for longer keeping

Wrap the cooled casserole for up to three months. Thaw overnight in the refrigerator and cover loosely while reheating.

Ingredients

Creamy chicken filling

  • 1 (10.5-ounce) can condensed cream of chicken soup, undiluted
  • 1 (10.5-ounce) can condensed cream of mushroom soup, undiluted
  • 3/4 cup milk
  • 4 cups cooked chicken, diced or shredded
  • 1 cup grated sharp cheddar cheese

Cornbread topping

  • 1 (8.5-ounce) box corn muffin mix, such as Jiffy
  • 1 (14.75-ounce) can cream-style sweet corn
  • 1/3 cup sour cream
  • 1 large egg
  • 2 tablespoons butter, melted

Directions

  1. Heat the oven to 400°F (205°C). Lightly coat a 3-quart baking dish with cooking spray. A 2-quart dish also works, but its deeper cornbread layer may need several extra minutes.
  2. In a large bowl, whisk the condensed cream of chicken soup, condensed cream of mushroom soup, and milk until smooth and evenly blended.
  3. Fold the cooked chicken and grated cheddar into the soup mixture. Spread the filling evenly in the prepared baking dish, including into the corners.
  4. In a second bowl, whisk the corn muffin mix, cream-style corn, sour cream, egg, and melted butter just until no dry pockets remain. A few small lumps are fine; the batter should be thick but spreadable.
  5. Spoon the cornbread batter over the chicken filling. Use the back of a spoon or a flexible spatula to ease it into an even layer without stirring it into the filling.
  6. Bake uncovered for 40 to 45 minutes, until the topping is golden, a toothpick inserted into its center comes out without wet batter, and the casserole reaches 165°F (74°C) in the center. If the top darkens before the center sets, tent it loosely with foil.
  7. Rest the casserole for 5 to 10 minutes before spooning. The filling thickens as it stands and the cornbread settles into a cleaner, more tender slice.
